Closing Event

F.O.A.M.: Obelisk

Please note: unfortunately this event has been cancelled due to recent COVID-19 restrictions on international travel.

Join us for the closing event of F.O.A.M.’s exhibition Obelisk on Saturday 4 December from 4-6pm.

To close out the exhibition, a pile of different sweet and edible foams will be served up by pastry chef and writer Maddalena Borsato amid the deconstructed remnants of the obelisk. The event is free and open to the public as a toast to foam in all its forms.

Maddalena Borsato is a researcher in Ecogastronomy and Gustatory Aesthetics at the University of Gastronomic Sciences in Pollenzo, where she is undertaking a PhD on the philosophy of sweet taste. Together with Jacopo Giacomoni she founded the website aristortele.it, and also promotes the political role of food as an instrument of self-determination and empowerment by working with some women's cooperatives in the Saharawi Refugee camps.
